I’m sure Teldoren has had a fair bit of interaction with the mortal races on Azeroth… does he have a certain race he’s attracted to more than the others? Whether aesthetically or culture-wise?

Well, besides other dragons, Teldoren is usually attracted to elves, since they tend to have longer lifespans, and he can identify w/ them more easily. The draenei would also count, but they’ve only been around for a few years so he hasn’t had time to come across one that he likes.
